Serves 3-4 (makes 10 pieces)
  • 300g Okara
  • 3 Tbsp chopped parsley
  • 2-3 cloves of garlic or 1 teaspoon garlic paste
  • Salt, cayenne pepper (replaceable with black pepper)
  • 2 chicken eggs (replaceable by 5 quail eggs per chicken egg)
  • olive oil
  • approx. 120g spelt flour


  1. Mix the Okara with the garlic paste (or pressed garlic cloves), chopped parsley, salt, cayenne pepper and eggs - only add enough flour for the mixture to create a mashed potato-like consistency (approx. the specified amount of 120g).
  2. Heat the oil in a non-stick pan and drop tablespoon sized heaps of mixture onto it. Wait a little until one side turns brown, flip it over and fry the other side.
  3. Serve with salad and herb sauce.
