This raw food soup uses cashew nuts as the cream base. It tastes just like a traditional soup – yet it is made without milk and it isn’t cooked.

Raw Foodist recommends that the soup is not heated above 50ºC, so there is no loss of enzymes. 

Zutaten

  • 300g of broccoli
  • 2 cups of cashew nuts
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 1 clove of garlic
  • 1 Tbsp lime juice
  • 1 tsp honey / agave syrup / maple syrup
  • ½ Tbsp vegetable broth

Zubereitung

  1. Wash the broccoli. Remove the stalk and cut it into small pieces. Chop up the florets and leaves.
  2. Soak the cashew nuts for about 4 hours and wash thoroughly.
  3. Finely chop rosemary and thyme. Peel the garlic and cut into small pieces.
  4. Put all of the ingredients into the jug. Fill it with cold water until in between both marks.
  5. Select program 4 and start.
  6. Garnish with finely chopped avocado and bell-pepper cubes for extra flavour.
