• 400ml homemade soy milk made with the AND SOY blender.
  • 140g wholemeal spelt flour
  • 1 pinch of salt
  • 1 pinch of turmeric


  1. To make the pancake dough mix the soy milk, flour, salt and turmeric and let it sit for 1 hour. Stirring it occasionally with a whisk.
  2. Heat a little vegetable oil in a flat pan. With a ladle pour as much dough into the pan so that the bottom is just thinly covered. Place the dough in the middle of the pan and distribute evenly by swirling the pan. Allow the pancake to turn golden brown on one side. Work with a medium heat. If the pancake releases from the pan and moves well in the pan, you can flip it over.
  3. Spread apricot jam onto the pancakes and roll them up. Sprinkle with icing sugar to serve.
